The dispersion kettle has a conical kettle shape. The dispersion device mounted in the bottom of the boiler creates a vertical and intensive fluid flow that is deflected by the corresponding boiler contour on the walls.
This intensive mixing effect destroys agglomerates and eliminates clumping.
By eliminating preferential flows, the anchor-shaped agitator mounted from above supports the dispersing or emulsifying process
A grid lid mounted next to the boiler lid allows powders to be added while the agitator rotates.
Typical applications for the dispersion boiler include rapid dissolution of solids in liquids, emulsification processes and the addition of highly clumping and expanding thickeners.
On the one hand, the system can be used as a stand-alone production unit, e.g. for soups, sauces, infusions and the like. On the other hand, the dispersion boiler is also often used as an auxiliary unit for e.g. tilt pans to prepare starch suspensions or sauce preparations, which are later added to the product in the tilt pans to set or finish it.
The dispersion kettle has been successful in the industrial production of ready-to-eat products for many years.
Originally, the dispersion kettle was developed to complement the tilting boiling kettle to allow the user to prepare starch suspensions for thickening soups and sauces and then add them to the product in the boiling kettle.
Today, the dispersion kettle fulfils many more tasks in an industrial kitchen.
